baked orzo with eggplant and mozzarella.

Ok, you guys have got to try this, especially since eggplants are now in season. It is super simple (my new fave way of cooking), made with lots of fresh veggies and soo flavorful, even without the garlic (I ran out)!

I used a recipe from Smitten Kitchen (one of my fave food blogs).   



I just made a few adjustments :: I used whole wheat orzo (I haven't had regular pasta since I changed the way I eat), 1 cup chicken stock + 1/2 cup water instead of vegetable stock (didn't have any), and I added cremini mushrooms that I had picked up at the farmers market this weekend. I didn't have any carrots or celery and I'm not sure I'd really like them in the mix, but that's just me. 

Will definitely be making this again and again with all of the eggplants coming up in our garden. Is anyone else soo excited for fall cooking?! I made my first comfort meal last night.. Grilled cheese with avocado & bacon and roasted tomato soup. Heaven. I plan on purchasing lots of puréed pumpkin this weekend and making pumpkin butter, pumpkin lattes, pumpkin cookies, pumpkin risotto, pumpkin bread... Haha, i'm obsessed. I love fall :)

This looks good! I am trying to eat healthier. No bread, no pasta, no sweets. (I have been REALLY bad the past few months.)
