{gourmet grilled cheese? yes, please.}

for dinner tonight, i was planning on doing whole-wheat spaghetti with a spicy tomato sauce with pancetta.  yumm.
when i went to get the ingredients out, i realized that i had bought prosciutto instead of pancetta. whoops
i also realized that i did not have the time to wait for a sauce to thicken. (hubby had school-related plans and i was running behind 
with din din as usual).

so i had to think quick and throw something together with the ingredients i had on hand.
and this is what i came up with :

{prosciutto & mozzarella grilled cheese}

 INGREDIENTS (2 servings) :

- 4 slices of prosciutto
- about 3 oz. shredded mozzarella (or 4 slices of mozzarella)
- olive oil
- about 3 sprigs of rosemary, chopped
- salt & pepper
- 4 slices italian bread (or whatever bread you have on hand)

first, i made a rosemary olive oil by combining some extra virgin olive oil, fresh rosemary and a bit of freshly ground salt & pepper. i brushed each side of the bread with the olive oil. next i stacked the sandwiches: a layer of shredded mozzarella, a slice of prosciutto, some more mozzarella, another slice of prosciutto. then of course, i grilled it. and it was a little taste of heaven.
so simple, yet SO tasty. 

as my husband put it : "this is ridiculous. in a good way."

Looks delicious! I love the idea of adding rosemary. I have plenty of it in my garden right now, I will have to do this.
